A vibrant and fulfilling dish that blends tender chicken with crisp cabbage, bell peppers, and carrots for a nutritious and quick weeknight dinner.

  • 1 tbsp butter
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 2 cups cabbage, chopped
  • 1 bell pepper, sliced (any color)
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions

  1. In a large skillet or wok, melt the butter over medium-high heat.
  2. Add the diced chicken to the skillet and cook until golden brown and completely cooked through, approximately 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the sliced onion and minced garlic. Stir-fry for 1-2 minutes until fragrant.
  4. Next, add the chopped cabbage, sliced bell pepper, and julienned carrot. Stir-fry for about 5 minutes, until the vegetables are tender yet still crisp.
  5. Return the cooked chicken to the skillet, then add the soy sauce, optional oyster sauce, sesame oil, black pepper, and optional crushed red pepper flakes. Stir until everything is well coated with the sauce.
  6. If you prefer a thicker sauce, add the cornstarch mixed with water to the skillet. Stir until the sauce thickens.
