A vibrant and fresh Chicken Burrito Bowl, combining chicken breast, salsa, black beans, corn, and avocado for a nutritious meal.

  • 1 lb Chicken breast
  • 1 cup Salsa
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn
  • 1 Avocado, diced
  • 1/4 cup Cilantro lime dressing
  • 2 cups Rice or quinoa (optional)
  • Fresh cilantro (for garnish)

Instructions

  1. Place the chicken breasts in the crockpot and cover with salsa.
  2. Cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is cooked through.
  3. Shred the chicken using two forks.
  4. Combine shredded chicken with black beans, corn, and diced avocado in a serving bowl.
  5. Optionally, serve over rice or quinoa.
  6. Drizzle with cilantro lime dressing and garnish with fresh cilantro.
  7. Serve warm.
