A comforting chicken and rice casserole with tender chicken, fluffy rice, and a creamy sauce, perfect for busy weeknight dinners.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice (uncooked)
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, mixed vegetables, onion powder, salt, and pepper. Stir well to combine.
  2. Pour the mixture into a greased baking dish and spread it evenly.
  3. Cover the dish with aluminum foil and bake for 45 minutes.
  4. Remove the foil and sprinkle cheese on top if desired.
  5. Bake for an additional 15 minutes or until the cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.

Notes

For added flavor, sauté onions and garlic before mixing in other ingredients. You can also use fresh vegetables instead of mixed for a fresher taste.
