A creamy classic dish combining tender chicken, vibrant vegetables, and a rich sauce, perfect for comforting family meals.

  • ½ cup (1 stick) unsalted butter
  • 1 medium green bell pepper, small diced
  • 1 small sweet onion, small diced
  • 2 cloves garlic, minced
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 ½ cups chicken stock
  • 1 cup heavy cream
  • 3 cups diced cooked chicken
  • 1 cup frozen peas
  • 4-ounce jar diced pimentos, drained

Instructions

  1. In a large skillet over medium heat, melt the butter.
  2. Add the green bell pepper and sweet onion, stirring occasionally until softened, about 10 minutes.
  3. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the flour, salt, and black pepper, stirring to combine and cook for 1 minute.
  5. Gradually whisk in the chicken stock and then the heavy cream.
  6. Bring to a simmer and thicken for about 5 minutes, stirring occasionally.
  7. Add the chicken, peas, and pimentos, stirring until combined and heated through, about 3 minutes.
  8. Adjust seasoning. Serve immediately with toast or biscuits.

Notes

Using rotisserie chicken can save time while providing excellent flavor. Stir continuously when adding liquids to prevent clumping.
