Ingredients

  • – 10 large eggs (10)
  • – 1/3 cup milk, we used unsweetened almond milk (80 ml)
  • – 1/2 cup cheddar cheese (60 g)
  • – salt and pepper, to taste

Instructions

  1. Begin by filling a large pot halfway with water, ensuring it’s deep enough to immerse all the mason jars.
  2. Attach your sous vide device to the pot and set it to 172°F. As the water heats, get the egg bites ready.
  3. Coat 9 mason jars (each 4 ounces) generously with nonstick spray, then place about a tablespoon of cheddar cheese at the bottom of each jar.
  4. In a medium-sized bowl, crack the eggs and pour in the milk. Whisk until the mixture is well-blended.
  5. Pour the egg mixture into each jar until they are about three-quarters full, yielding approximately 9 portions. Stir gently and season the tops with salt and pepper to your liking.
  6. Fasten the lids on the mason jars, but be sure not to tighten them completely to prevent bursting. Secure the lids and then loosen them by one turn.
  7. Place the mason jars into the water bath; you should notice bubbles rising to the surface, which is a positive sign.
  8. Set a timer for 1 hour and allow them to cook.
  9. When the time is up, carefully use tongs to remove the mason jars (they will be hot) and loosen the lids. The egg bites should have a soufflé-like texture. If they are still runny, cook them for a bit longer. If they are done, enjoy with a fork!
