340g rotini pasta
2 chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons chopped parsley
Instructions
Season the chicken with salt, pepper, and Italian seasoning. Heat olive oil in a pan over medium-high heat. Cook chicken for 5–6 minutes per side until golden and fully cooked. Set aside to rest, then slice.
Cook rotini pasta in salted boiling water according to package directions until al dente. Drain and set aside.
In the same skillet, sauté garlic in a bit of olive oil for 1–2 minutes. Add heavy cream and simmer gently.
Stir in Parmesan and mozzarella cheese until the sauce is creamy. Season with salt and pepper.
