A comforting one-dish wonder combining tender chicken and rich, cheesy rice.

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with garlic powder, onion powder, black pepper, and salt.
  3. Place the seasoned chicken in a single layer in the baking dish.
  4. Evenly distribute the uncooked rice over the seasoned chicken.
  5. In a bowl, mix the chicken broth, cheddar cheese, and sour cream until well combined.
  6. Pour the mixture over the rice and chicken, ensuring everything is coated evenly.
  7. Cover tightly with foil and bake for 40-45 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.

Notes

For an extra creamy dish, add more sour cream or cream cheese to the cheese mixture. Garnish with parsley or green onions before serving.
