A comforting and simple cheesy chicken and rice dish that’s perfect for weeknight dinners.

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • Salt (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with garlic powder, onion powder, black pepper, and salt. Place them in a single layer in the baking dish.
  3. Evenly distribute the uncooked rice over the seasoned chicken.
  4. In a bowl, mix the chicken broth, cheddar cheese, and sour cream until well combined. Pour this mixture over the rice and chicken.
  5. Cover tightly with foil and bake for 40-45 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.

Notes

For enhanced flavor, consider adding spices like paprika or thyme before baking. Store leftovers in an airtight container for up to 3-4 days.
