A comforting casserole featuring tender chicken, wholesome broccoli, and cheesy rice that brings warmth and togetherness to family dinners.

  • 1 pound chicken breasts, cut into 1×1-inch cubes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups white long grain rice, rinsed
  • 2 cups chicken stock
  • 2 cups water
  • 3 cups broccoli florets, roughly chopped
  • 1/2 cup milk
  • 2 cups sharp cheddar cheese, shredded (divided)

Instructions

  1. Season the cubed chicken breasts with salt and pepper.
  2. Preheat a pan to medium-high heat and add olive oil.
  3. Brown the chicken on all sides for about 5-7 minutes.
  4. Remove the chicken and sauté the chopped onion in the same pan for about 5 minutes.
  5. Add minced garlic and stir for 30 seconds.
  6. Return the chicken to the pan, then add the rinsed rice, chicken stock, and water.
  7. Bring to a boil, then reduce the heat to low and cover. Simmer for 10 minutes.
  8. Add the chopped broccoli, stir, re-cover, and cook until rice is tender, stirring occasionally.
  9. Preheat the oven to 425°F.
  10. Add milk and 1 cup of cheese to the rice mixture and stir well.
  11. Spread the mixture in a casserole dish, sprinkle with the remaining cheese, and bake for 10-15 minutes until cheese is melted and bubbling.

Notes

Adjust seasoning to your taste; consider adding red pepper flakes for a kick or substituting broccoli with other vegetables.
