1 pound chicken breasts, cut into 1×1-inch cubes
1 small onion, finely chopped
2 cloves garlic, minced
1 ½ cups white long-grain rice, rinsed
2 cups chicken stock
2 cups water
3 cups broccoli florets, roughly chopped
½ cup milk
2 cups sharp cheddar cheese, shredded, divided
Salt and pepper to taste

Instructions
Season the chicken cubes with salt and pepper. Heat olive oil in a pan over medium/high heat. Add the chicken and brown on all sides for about 5–7 minutes. Remove the chicken from the pan and set aside.
Return the browned chicken to the pan. Add the rinsed rice, chicken stock, and water. Stir, bring to a boil, reduce the heat to low, and cover with a lid.
After 10 minutes, add the chopped broccoli. Stir and cover again until the rice is fully cooked, stirring occasionally.
Once cooked, stir in the milk and add 1 cup of the shredded cheese. Fold it into the mixture. Sprinkle the remaining cheese over the top.
Transfer to a preheated oven at 425°F for 10–15 minutes, or until the cheese is melted and bubbling.
For a crisp topping, broil for an additional minute or two, watching closely to avoid burning.
