  • 2 boneless, skinless chicken breasts, cut into bite-sized chunks
  • 12 oz rotini pasta
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to boil. Add the rotini; cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Toss the chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Add the seasoned chicken to the skillet. Cook for about 6-7 minutes until browned and fully cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the chicken broth and heavy cream; bring to a gentle simmer.
  6. Stir in the mozzarella, Parmesan, and cheddar cheeses. Mix until smooth and fully melted.
  7. Add the cooked rotini and the chicken back into the skillet. Toss to coat everything evenly in the cheesy Cajun garlic sauce.
  8. Let simmer for 2-3 minutes to meld the flavors.

Notes

For a milder version, reduce Cajun seasoning. Add vegetables like spinach or bell peppers for extra nutrition.
