A delectable Cajun chicken burger featuring marinated chicken thighs with bold flavors, a crispy exterior, and spicy sauces.

  • 1 cup buttermilk
  • 1 egg
  • Salt to taste
  • 1 tbsp black pepper
  • 1 tbsp Cajun spice
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 cup plain flour
  • 1/4 cup corn flour
  • 1/4 cup mayonnaise
  • 2 tbsp Sriracha
  • 2 tbsp honey
  • Chopped spring onions
  • 1 tbsp chopped gherkins
  • Chopped parsley
  • Brioche buns
  • Lettuce, tomatoes, onions, gherkins for toppings

Instructions

  1. Marinate chicken thighs in a mixture of buttermilk, egg, salt, black pepper, Cajun spice, garlic powder, and paprika for at least 2 hours.
  2. Prepare the dry batter by mixing plain flour, corn flour, salt, black pepper, garlic powder, and paprika in another bowl.
  3. Remove marinated chicken from buttermilk, coat in dry batter, ensuring an even layer.
  4. Heat oil in a frying pan over medium heat and fry the chicken thighs until golden brown and cooked through.
  5. Prepare honey Sriracha sauce by mixing mayonnaise, Sriracha, honey, and chopped spring onions.
  6. Combine mayonnaise, Sriracha, chopped gherkins, garlic powder, paprika, and chopped parsley to create the burger sauce.
  7. Assemble the burgers with sauces on warm brioche buns, followed by chicken thighs, crisp lettuce, fresh tomatoes, onions, and gherkins.

Notes

For extra crunch, consider double-dipping the chicken before frying. Ensure oil is at the right temperature to achieve a crispy texture.
