A flavorful chicken burger marinated in buttermilk and seasoned with Cajun spices, served on a brioche bun with fresh toppings.

  • 500g chicken thighs
  • 1 cup buttermilk
  • 1 egg
  • Salt to taste
  • 1 tbsp black pepper
  • 1 tbsp Cajun spice
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 1 cup plain flour
  • 1/4 cup corn flour
  • 1/4 cup mayonnaise
  • 2 tbsp Sriracha
  • 2 tbsp honey
  • Chopped spring onions
  • 1 tbsp chopped gherkins
  • 1/2 cup chopped parsley
  • Brioche buns
  • Lettuce
  • Tomatoes
  • Onions
  • Gherkins

Instructions

  1. Marinate the chicken thighs in buttermilk, egg, salt, black pepper, Cajun spice, garlic powder, and paprika for at least 1 hour.
  2. In a separate bowl, mix the dry batter ingredients: flour, corn flour, black pepper, garlic powder, and paprika.
  3. Dredge the marinated chicken thighs in the dry batter.
  4. Heat oil in a pan over medium heat and fry the chicken for 6-8 minutes on each side until golden brown and cooked through.
  5. Prepare the Honey Sriracha sauce by mixing mayonnaise, Sriracha, honey, and chopped spring onions.
  6. Mix the burger sauce ingredients in another bowl.
  7. Toast brioche buns lightly.
  8. Assemble the burgers: spread sauces on buns, layer with lettuce, tomatoes, onions, gherkins, and top with fried chicken.
  9. Serve hot.

Notes

For an extra-crispy coating, use a double-dip method. Ensure the oil is heated properly for the best frying results.
