Juicy and flavorful buffalo chicken burgers with a spicy kick, perfect for any meal.

  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup almond flour
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 cup celery (finely sliced)
  • 1 tablespoon buffalo sauce
  • 1 tablespoon ghee (cold and cut into little chunks)
  • Butter lettuce or bun of choice (lettuce bun, gluten-free, or regular)
  • Optional: sliced green onions
  • Optional: more buffalo sauce
  • Optional: ranch dressing
  • Optional: blue cheese dressing
  • Optional: blue cheese crumbles

Instructions

  1. In a mixing bowl, combine the ground chicken, egg, almond flour, onion powder, garlic powder, kosher salt, finely sliced celery, buffalo sauce, and chunks of cold ghee. Mix until thoroughly combined.
  2. Divide the mixture into four equal balls, then shape them into burger patties.
  3. Optional: Cover the plate of patties and refrigerate for 30-60 minutes.
  4. Preheat the grill to 400-450°F. Line the clean grill grates with aluminum foil and generously spray it with non-stick or avocado oil spray.
  5. Place the patties on the foil over direct heat. Cook for 5-7 minutes per side, until the internal temperature reaches 160-165°F.
  6. Remove the patties from the grill and let them rest for 5-10 minutes before serving.

Serve with various toppings and side dishes such as sweet potato fries or a crisp salad for a balanced meal.
