  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Mozzarella cheese, shredded
  • 2 Fresh tomatoes, diced
  • 1/4 cup Fresh basil, chopped
  • Balsamic glaze, for serving

Instructions

  1. Preheat your grill or oven.
  2. Marinate chicken breasts with olive oil, balsamic vinegar, garlic, Italian seasoning, paprika, salt, and pepper.
  3. Grill or bake chicken until cooked through.
  4. Prepare bruschetta by combining diced tomatoes, fresh basil, garlic, olive oil, balsamic vinegar, and salt in a bowl.
  5. Top grilled chicken with mozzarella cheese and let it melt.
  6. Serve the chicken drizzled with balsamic glaze and topped with the bruschetta mixture.

Notes
