A delicious balance of sweet and savory flavors in juicy chicken cooked with a pineapple sauce.

  • 4 boneless, skinless chicken breasts
  • 1 cup brown sugar
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 cup fresh pineapple chunks
  • Salt and pepper (to taste)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Sear the chicken for about 4-5 minutes on each side until golden brown; remove and set aside.
  4. In the same skillet, combine brown sugar, soy sauce, ketchup, minced garlic, and ground ginger to make the sauce.
  5. Add pineapple chunks to the sauce and stir gently.
  6. Return the seared chicken to the skillet, coating it in the sauce.
  7. Reduce the heat to low, cover, and simmer for 20-25 minutes until cooked through (165°F internal temperature).
  8. Garnish with chopped cilantro before serving.

Notes

Allow chicken to rest after searing to redistribute juices. Add a splash of lime juice for tang.
