  • 4 pieces boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) if baking or heat a skillet over medium-high heat.
  2. In a bowl, combine the brown sugar, soy sauce, ketchup, minced garlic, and ground ginger. Mix well to create a flavorful sauce.
  3. Season the chicken breasts with salt and pepper, making sure to coat them evenly.
  4. If using a skillet, heat the vegetable oil and sear the chicken breasts for about 3-4 minutes per side until browned.
  5. Pour the sauce over the chicken and top with fresh pineapple chunks.
  6. If baking, transfer the skillet to the oven and bake for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). If using stovetop, cover and simmer for about 15-20 minutes.
  7. Garnish with chopped fresh cilantro before serving.

Notes

Marinate the chicken in the sauce for a few hours for enhanced flavor. Consider adding cashews or macadamia nuts as a topping for crunch.
