A quick and nutritious stir fry combining crisp broccoli florets and umami-rich mushrooms, elevated with garlic and ginger. Perfect for busy weeknights!

  • 2 cups broccoli florets
  • 1 cup sliced mushrooms (button or shiitake)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (or a vegan alternative)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. Start by washing and cutting the broccoli into bite-sized pieces. Slice the mushrooms and onion. Mince the garlic and ginger.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  4. Toss in the sliced onions. Sauté until they become translucent, about 2-3 minutes.
  5. Add the sliced mushrooms. Cook for an additional 3-4 minutes until they soften.
  6. Incorporate the broccoli florets. Stir-fry together for about 5-6 minutes until the broccoli is bright green but still crisp.
  7. Pour soy sauce and oyster sauce over the vegetables. Stir well to coat everything evenly.
  8. Drizzle sesame oil and stir for another minute, allowing the flavors to meld.
  9. Sample the stir fry and add salt and pepper according to your taste preference.
  10. Garnish with sliced green onions and sesame seeds before serving.

Notes

Feel free to experiment with different vegetables based on what’s in season or available. For a gluten-free option, substitute soy sauce with tamari.
