  • 1.5 pounds boneless skinless chicken breasts (or 4 large breasts)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (divided)
  • ½ teaspoon paprika
  • 1 tablespoon Italian seasoning
  • 1 cup small chopped broccoli florets
  • 1 cup shredded cheddar cheese
  • ¼ cup cream cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the chicken breasts in the middle to create a pocket for stuffing.
  3. Season the chicken on all sides with salt, pepper, paprika, and Italian seasoning.
  4. In a bowl, mix chopped broccoli, cheddar cheese, ½ teaspoon garlic powder, and cream cheese. Season to taste.
  5. Spoon the mixture into each chicken breast pocket and secure with toothpicks.
  6. Heat olive oil in a large ovenproof skillet over medium-high heat.
  7. Sear the stuffed chicken for 2-3 minutes on each side until browned.
  8. Transfer the skillet to the oven and bake for 15-17 minutes, or until the internal temperature reaches 165°F (74°C).

Notes

Allow the chicken to rest for a few minutes after cooking for better juiciness. Experiment with different vegetables and cheeses for unique variations.
