Deliciously moist chicken breasts stuffed with a creamy broccoli and cheddar filling, perfect for family dinners.

  • 4 large boneless, skinless chicken breasts
  • 3 cups steamed and chopped broccoli florets
  • 1 1/2 cups shredded cheddar cheese
  • 2 oz cream cheese (room temperature)
  • 1 tablespoon chopped fresh chives (or any preferred fresh herbs)
  • Garlic powder, cumin, or spices, to taste
  • 1/4 cup olive oil (divided for cooking)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Steam the broccoli florets in a microwave-safe bowl with 2 tablespoons of water for 2 minutes, then chop them.
  3. In a bowl, mix chopped broccoli with shredded cheddar, cream cheese, chives, salt, and pepper.
  4. Cut a deep pocket into each chicken breast and stuff with the broccoli-cheese mixture.
  5. Season the outsides of the chicken with garlic powder, salt, pepper, and any other spices you enjoy.
  6. Heat olive oil in an ovenproof skillet over medium heat and sear the chicken for about 3 minutes per side until golden.
  7. Transfer the skillet to the oven and bake for 10-15 minutes, or until the internal temperature reaches 165°F.
  8. Let the chicken rest before serving. Enjoy!

Don’t skip the resting time after baking to ensure juicy chicken. You can experiment with different spices and herbs to customize the flavor.
