Broccoli, Cauliflower and Cheese Soup

A comforting and creamy soup made with fresh broccoli, cauliflower, and sharp cheddar cheese that warms the heart and soul.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • Salt and pepper (to taste)
  • 3 tablespoons all-purpose flour
  • 4 cups water
  • 4 teaspoons chicken base
  • 3 cups fresh broccoli florets
  • 3 cups fresh cauliflower florets
  • 1 cup half and half
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced carrots, celery, and onions. Season with salt and pepper to taste. Sauté the vegetables until they start to soften, around 5 minutes.
  3. Stir in the flour and cook for an additional minute.
  4. Combine 4 cups of water with 4 teaspoons of chicken base, then add this mixture to the pot alongside the broccoli and cauliflower.
  5. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it simmer until the veggies are tender, about 10 minutes.
  6. Once tender, turn off the heat and use a potato masher to mash the veggies to your desired consistency.
  7. Finally, stir in the half and half and shredded sharp cheddar cheese. Turn the heat back on to low and mix until the cheese melts completely. Adjust seasoning if desired.

Notes

For a thicker texture, adjust the amount of flour or reduce the liquid slightly. Fresh ingredients yield the best results.
