A comforting and flavorful dish that combines creamy Boursin cheese with tender chicken and perfectly cooked pasta.

  • 2 chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 cup Boursin cheese
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and slice.
  3. In the same skillet, add minced garlic and sauté for 1 minute. Then pour in the chicken broth and bring to a simmer.
  4. Stir in the Boursin cheese until melted and combined. Add the cooked pasta and sliced chicken, stirring to coat everything in the sauce.
  5. Garnish with fresh parsley before serving.

Notes

For the best results, season the chicken well before cooking. Use a non-stick skillet to prevent sticking, and consider adding extra garlic for more flavor.
