A vibrant and refreshing BLT Chicken Salad featuring crispy bacon, tender chicken, creamy avocado, and a tangy dressing. Perfect for weeknights or gatherings.

  • 4 cups shredded rotisserie chicken
  • 8 strips chopped center-cut bacon
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon ranch seasoning
  • 1/2 teaspoon freshly cracked pepper
  • 1/3 cup diced green onions
  • 2/3 pint halved grape tomatoes
  • 1 diced avocado

Instructions

  1. In a large mixing bowl, combine mayonnaise and Greek yogurt. Whisk in ranch seasoning and pepper until well combined.
  2. Add the shredded chicken, chopped bacon, and diced green onions to the bowl. Mix until fully incorporated.
  3. Gently fold in the halved grape tomatoes.
  4. Taste and adjust seasonings as preferred.
  5. Right before serving, gently toss in diced avocado.
  6. Chill in the refrigerator for at least one hour before serving.

Notes

Letting the chicken salad chill allows flavors to meld beautifully. Add avocado fresh before serving to maintain its vibrant color.
