Delicious quesadillas filled with juicy chicken, sweet and spicy hot honey BBQ sauce, and melty cheese, all wrapped in crispy flour tortillas.

Ingredients

  • Cooking oil of choice
  • 1 pound boneless, skinless chicken thighs (or chicken breasts)
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more for drizzling)
  • 2 tablespoons hot honey (plus more for drizzling)
  • 4 large burrito-size flour tortillas
  • 3 cups shredded cheese of choice
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, jalapeños

Instructions

  1. Preheat the griddle to medium heat and drizzle with cooking oil.
  2. Add seasoned chicken to the griddle and cook for about 6 minutes, stirring occasionally.
  3. Drizzle chicken with BBQ sauce and hot honey and cook for an additional 2 minutes.
  4. Remove chicken from the griddle and reduce heat to medium-low.
  5. Add more cooking oil and lay tortillas flat on the griddle, sprinkle half of the cheese on one half of each tortilla.
  6. Spoon the chicken mixture onto the cheesy side, drizzle with more BBQ sauce and hot honey, and add cilantro if desired. Finish with the remaining cheese.
  7. Fold tortillas over the filling and cook for 1-2 minutes per side until cheese melts and tortillas crisp.
  8. Remove quesadillas from the griddle and slice into wedges for serving.

Notes

Serve warm with additional BBQ sauce and hot honey for drizzling, and offer toppings like sour cream and jalapeños for customization.
