Ingredients

  • Cooking oil of choice
  • 1 1/2 pounds redskin or gold potatoes, cut into bite-sized pieces
  • Kosher salt
  • Pepper
  • Seasoning blend of choice (e.g., Kinder’s Garlic and Herb)
  • 1 1/2 to 2 pounds steak of choice (e.g., sirloin), cut into bite-sized pieces
  • 6 to 8 cloves garlic, minced
  • 4 tablespoons butter

Instructions

  1. Preheat your griddle to medium heat for several minutes.
  2. Add a few tablespoons of cooking oil along with the cut potatoes.
  3. Season the potatoes generously with kosher salt, pepper, and your chosen seasoning blend.
  4. Add a splash of water and cover the potatoes with a melting dome to steam them.
  5. Cook for 8 to 9 minutes while mixing occasionally to ensure they don’t stick.
  6. Once the potatoes are nearly tender, remove the dome.
  7. Add more oil and the bite-sized steak pieces to the griddle.
  8. Sprinkle in the minced garlic, additional salt, pepper, and more seasoning.
  9. Cook until the steak is browned and cooked through, about 5 to 6 minutes.
  10. In the final minute, add the butter and mix well as it melts and marries with the other flavors.

Notes

For medium-rare steak, aim for an internal temperature of about 130-135°F. Pair with a fresh salad or grilled vegetables for a balanced meal.
