A simple yet flavorful dish of stir-fried chicken and mushrooms highlighted with black pepper, perfect for family dinners.

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper, divided
  • 1 medium onion, sliced
  • 1 bell pepper, sliced (red or green)
  • 8 ounces mushrooms, sliced (shiitake or button)
  • 3 cloves garlic, minced
  • 2 green onions, chopped for garnish
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon honey
  • ½ teaspoon rice vinegar
  • 2 tablespoons vegetable oil, divided

Instructions

  1. In a mixing bowl, combine the thinly sliced chicken with cornstarch, salt, and ½ teaspoon of black pepper, ensuring even coating.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat and stir-fry the chicken until golden brown, about 4 to 5 minutes. Remove and set aside.
  3. Add another tablespoon of oil in the same skillet and stir-fry the sliced onion and bell pepper for 2 to 3 minutes until softened.
  4. Incorporate the sliced mushrooms and minced garlic into the skillet. Cook for another 2 to 3 minutes until fragrant.
  5. Whisk together the soy sauce, oyster sauce, honey, rice vinegar, and remaining black pepper in a small bowl.
  6. Pour the sauce over the vegetables in the skillet, return the chicken, and toss to coat evenly. Heat through for another 1 to 2 minutes.
  7. Garnish with chopped green onions before serving.

Notes

For added variety, experiment with different mushroom types and consider including snap peas or broccoli.
