A creamy, comforting white chili made with ground turkey and white beans, perfect for chilly weather gatherings.

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey or chicken
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup corn kernels (frozen or fresh)
  • 1 cup shredded cheese (optional, for serving)
  • Chopped cilantro (optional, for serving)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened.
  3. Introduce the ground turkey or chicken to the pot, cooking until browned.
  4. Stir in the white beans, diced green chiles, cumin, oregano, chicken broth, salt, and pepper.
  5. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
  6. Add the corn kernels, cooking for an additional 5 minutes until heated through.
  7. Serve hot, topped with shredded cheese and fresh cilantro if desired.

Notes

For additional flavor, consider using smoked paprika or cayenne pepper. To achieve a creamier texture, add a splash of heavy cream or sour cream before serving.
