2 – 3 lb (1.13 kg) Tri Tip Roast
1 clove garlic, crushed
Salt and pepper to taste
Instructions
Set your sous vide device to 55°C or 131°F.
Season the tri tip with salt and pepper according to your preference. Place the tri tip in a freezer-safe bag along with the crushed garlic, then expel the air using a vacuum sealer or the water displacement technique. Submerge the tri tip in the water bath for 6 hours.
Take the bag out of the water bath. Remove the tri tip from the bag, pat it dry, and season again with salt and pepper to your liking. Preheat a pan on high heat, then add some oil. Sear the tri tip for 1 to 2 minutes on each side.
Slice the tri tip and serve it with a topping of fresh chimichurri or your preferred BBQ sauce, and enjoy your meal!

Consider marinating the tri tip with crushed garlic before sous vide cooking for a stronger garlic flavor.
