Ingredients
– 3-5 pounds (1.4-2.3 kg) beef brisket
– 2 teaspoons (10 ml) smoked salt
– 1 teaspoon (5 ml) pepper
– 1 teaspoon (5 ml) cumin powder
– 2 tablespoons (30 ml) olive oil
Instructions
Set your sous vide device to reach 135ºF.
As the water heats, coat the brisket with smoked salt, pepper, and cumin powder.
Warm a cast iron skillet over medium-high heat and pour in the olive oil.
Once the oil is shimmering, place the brisket in the pan and brown each side for 3 to 5 minutes to form a crust.
Seal the brisket in a vacuum bag and immerse it in the sous vide water set at 135ºF for 48 hours.
After cooking, take the brisket out of the warm bath and place it in an ice bath to cool to room temperature. Once cool, move the brisket to a cutting board and dry it with a paper towel to remove any moisture.
To finish the brisket, shred the meat with two forks or slice it. You can also broil it in the oven on high with BBQ sauce for 5 minutes, or smoke it at 225 – 250ºF for up to 3 hours.
Notes
Add a hint of liquid smoke to the seasoning mix for a smokier flavor.
Ensure the brisket is thoroughly dried before browning for a crispy crust.
Extend sous vide cooking time for up to 72 hours for a more tender brisket.
