A hearty and comforting dish featuring tender chicken thighs simmered in a rich gravy served over fluffy white rice.

Ingredients

  • 4 chicken thighs
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon thyme

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Sear the chicken until golden brown on both sides, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
  6. Stir in the chicken broth and bring to a simmer.
  7. Return the chicken to the skillet, cover, and let it simmer for 20-25 minutes until cooked through.
  8. Stir in the heavy cream and thyme, and simmer for another 5 minutes.
  9. Meanwhile, cook the rice according to package instructions.
  10. Serve the chicken and gravy over the fluffy white rice.

Notes

For a thicker gravy, mix cornstarch and water to create a slurry and stir it into the gravy. Optional: add vegetables like peas or carrots for extra nutrition.
