  • 12 oz (340g) ground beef (80/20)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 12 tablespoons ketchup
  • 1 tablespoon mustard
  • Brioche buns
  • 2 slices cheddar cheese
  • Pickles
  • Lettuce
  • Onion, thinly sliced
  • Tomato slices

Instructions

  1. Divide the ground meat into 3 oz (85g) portions and roll each portion into balls.
  2. Place each ball between two pieces of parchment paper and flatten them using a mallet.
  3. In a bowl, mix mayonnaise, sour cream, ketchup, mustard, and black pepper for the sauce, then refrigerate.
  4. Heat a cast iron skillet or griddle over medium-high heat.
  5. Season one side of the meat with salt and pepper, place it in the pan, season the other side, and cook for 1-2 minutes.
  6. Flip the burger and cook for an additional 30 seconds to a minute, adding cheese to one patty.
  7. Remove from the pan and toast brioche buns for 30 seconds on the grill.
  8. Spread the sauce on the bottom bun, add lettuce, tomato, onion, and the double patties.
  9. Add pickles, drizzle extra sauce, and cover with the top bun.

Notes

For best results, let the burgers rest for a brief period after cooking to retain their juices.
