A delightful pasta dish featuring tender chicken in a creamy sauce with sun-dried tomatoes, perfect for a special dinner.

Ingredients

  • 1 lb boneless, skinless chicken breast (sliced or cubed)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ½ cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • ½ lb (8 oz) penne pasta
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken with salt and pepper. Sear in a skillet with olive oil until browned and cooked through, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, melt the butter and add garlic, sautéing for 30 seconds. Add flour and whisk for 1-2 minutes, ensuring it forms a roux.
  3. Slowly add the chicken broth, stirring continuously. Add heavy cream and mix until thickened. Stir in Parmesan until melted.
  4. Mix in sun-dried tomatoes, smoked paprika, and Italian seasoning. Allow the sauce to simmer for a few minutes.
  5. Return the chicken to the skillet. Cook penne pasta separately until al dente, then drain and toss it into the skillet, ensuring it’s coated in sauce.
  6. Top with chopped basil and serve hot.

Notes

For added flavor, marinate the chicken briefly in Italian seasoning before cooking. A quick sauté of the sun-dried tomatoes can boost their flavor.
