A light and zesty chicken salad made with tender chicken, crunchy celery, and sweet grapes, perfect for summer picnics and gatherings.

Ingredients

  • 2.5 cups cooked, diced or shredded chicken
  • 3 stalks of celery, about 1/2 cup diced
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 12 teaspoons fresh lemon zest
  • Salt and pepper to taste

Instructions

  1. Prepare grapes by soaking them in a bowl of water with 1 teaspoon of baking soda for 5 minutes; rinse and slice.
  2. In a medium bowl, combine prepared grapes with diced chicken, celery, chopped pecans, red onion, Greek yogurt, mayonnaise, mustard, lemon juice, and lemon zest.
  3. Toss everything gently until well mixed.
  4. Season with salt and pepper to taste.
  5. Serve immediately or refrigerate for a few hours to enhance flavors.
