The BEST Filipino Chicken Adobo, featuring tender chicken simmered in a flavorful marinade of soy sauce, vinegar, garlic, and spices, evoking the rich essence of Filipino cuisine.

Ingredients

  • 4 lb bone-in, skin-on chicken thighs and/or legs
  • 2 tbsp cooking oil
  • 3/4 cup soy sauce
  • 1/2 cup cane vinegar or white vinegar
  • 1/2 cup sake or water
  • 1 tbsp fish sauce
  • 3 tbsp sugar
  • 1/3 cup chopped garlic
  • Zest from 1 lime or lemon
  • 4 bay leaves
  • 1/2 tsp black pepper
  • Chopped green onions and cilantro for garnish (optional)

Instructions

  1. Heat a large Dutch oven or deep pan over medium-high heat and add cooking oil.
  2. Place the chicken pieces, skin side down, into the hot oil, cooking for 6 to 7 minutes until golden brown and crispy.
  3. While the chicken cooks, combine the soy sauce, vinegar, sake or water, fish sauce, sugar, garlic, lime zest, bay leaves, and black pepper in a mixing bowl. Stir to dissolve the sugar.
  4. Once the chicken is browned, flip the pieces and drain some excess fat if desired.
  5. Pour the sauce mixture into the pot, ensuring the chicken is well-coated.
  6. Bring to a boil, cover, and reduce the heat to simmer for 20 to 25 minutes.
  7. After simmering, remove the lid and coat the chicken with the sauce for 5 minutes.
  8. Garnish with green onions and cilantro if desired, then serve with warm cooked rice.

Notes

For maximum flavor, marinate chicken overnight. Leftover adobo tastes even better the next day.
