  • 1 cup barbecue sauce
  • 2 medium sweet potatoes
  • 1 avocado, diced
  • 1 cup corn (canned or frozen)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper.
  3. Spread seasoned sweet potato cubes on the baking sheet and roast for 25-30 minutes until tender and caramelized.
  4. While sweet potatoes roast, cook the chicken breasts on medium heat until the internal temperature reaches a safe level, brushing with barbecue sauce last few minutes.
  5. Allow the chicken to rest, then slice into bite-sized pieces.
