  • 1/2 pineapple, peeled, cored, and sliced
  • Oil for grilling
  • 1 (14 ounce) bag of tortilla chips
  • 2 cups of chicken, cooked and shredded or sliced
  • 1/2 cup BBQ sauce
  • 1/2 cup red onion, sliced or diced
  • 1/2 cup candied jalapenos
  • 2 cups Monterey Jack cheese, shredded

Instructions

  1. Heat your grill to medium-high heat and lightly oil the grates.
  2. Grill the pineapple slices for about 2-3 minutes per side or until slightly charred.
  3. In an oven-safe pan or dish, layer the tortilla chips evenly across the bottom.
  4. Top the chips with grilled pineapple, followed by the shredded chicken coated with BBQ sauce.
  5. Sprinkle sliced red onion and candied jalapenos over the chicken.
  6. Finally, generously cover the entire dish with shredded Monterey Jack cheese.
