A flavorful and crispy chicken dish served over rice with fresh veggies and a spicy Bang Bang sauce.

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tbsp sriracha sauce
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • ½ cup sliced cucumbers
  • ½ cup shredded carrots
  • Salt and pepper, to taste
  • Oil for frying

Instructions

  1. Season the chicken pieces with salt and pepper in a large bowl.
  2. Dredge each chicken piece in the all-purpose flour.
  3. Dip the floured pieces into the beaten eggs.
  4. Coat the chicken pieces with panko breadcrumbs.
  5. Heat oil in a frying pan over medium heat and fry the breaded chicken until golden brown (about 4–6 minutes per batch).
  6. Drain the chicken on paper towels.
  7. Mix mayonnaise, sweet chili sauce, and sriracha in a small bowl to create the Bang Bang sauce.
  8. In serving bowls, layer cooked rice, shredded lettuce, sliced cucumbers, shredded carrots, and crispy chicken. Drizzle the Bang Bang sauce generously over the top.
  9. Serve warm and enjoy!

Notes

For a variation, try using shrimp or tofu instead of chicken. Adjust the heat level in the sauce as per your preference.
