  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1/2 cup chili sauce
  • 1/2 cup mayonnaise (light for healthier option)
  • 4 green onions, finely chopped
  • 3 cups cooked rice or noodles
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey (or agave syrup for vegan)
  • Juice of 1 lime (freshly squeezed)

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. Heat 1 tablespoon oil in a skillet over medium-high heat. Add the chicken and cook until golden brown, about 7-10 minutes.
  3. In a separate bowl, mix mayonnaise, chili sauce, soy sauce, honey, and lime juice until smooth.
  4. Reduce the heat to low, pour the sauce over the cooked chicken, and stir well to coat evenly. Simmer for 2-3 minutes.
  5. Serve the mixture over rice or noodles and garnish with green onions.

Notes
