A comforting baked Tuscan chicken casserole featuring juicy chicken breasts in a creamy sauce with cheese and sun-dried tomatoes, perfect for busy weeknights.

Ingredients

  • 2 large chicken breasts, halved horizontally
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tbsp oil from the sun-dried tomato jar
  • 1 1/2 cups fresh spinach, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts in half horizontally and season both sides with salt, pepper, and garlic powder.
  3. Arrange the pieces in a greased baking dish.
  4. Combine softened cream cheese and heavy cream in a mixing bowl, beating until smooth.
  5. Stir in onion powder, paprika, Italian seasoning, Parmesan cheese, and half of the shredded mozzarella.
  6. Pour the creamy mixture evenly over the chicken breasts in the baking dish.
  7. Drizzle sun-dried tomato oil over the dish and scatter chopped sun-dried tomatoes throughout.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil, add chopped spinach, and sprinkle remaining mozzarella cheese on top.
  10. Bake uncovered for an additional 10 minutes or until the chicken is cooked through and cheese is melted and bubbly.

Notes

For added flavor, consider using fresh herbs or a splash of lemon juice before serving. For variations, try mascarpone cheese or red pepper flakes.
