Delicious baked chicken thighs marinated with lemon, garlic, and Mediterranean spices for a flavorful meal.

  • 8 chicken thighs (bone-in, skin and excess fat removed)
  • 1 onion (thinly sliced)
  • 1 ripe tomato (skin removed and grated)
  • 2–3 tablespoons of extra virgin olive oil
  • 1 lemon (juice)
  • 2 sprigs of fresh rosemary (optional)
  • 5 garlic cloves (minced)
  • 1 teaspoon of oregano
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of onion powder
  • ½ teaspoon of white pepper
  • Salt (to taste)

Instructions

  1. Make the marinade: In a bowl, combine the lemon juice, olive oil, minced garlic, oregano, smoked paprika, cumin, onion powder, and white pepper. Mix well to form a marinade and season with salt to taste.
  2. Add chicken: Place the chicken thighs in the bowl with the marinade. Make sure to coat each piece thoroughly. Let it marinate for at least 30 minutes for enhanced flavors.
  3. Bake: Transfer the marinated chicken to a baking dish. Arrange the sliced onions and grated tomato around the chicken. If using, tuck in the sprigs of rosemary for added aroma. Bake in the preheated oven for 35–45 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is golden brown.
  4. Serve: Let the chicken rest for a few minutes after baking, allowing the juices to redistribute. Serve warm, and enjoy the delightful flavors.

Notes

For a richer taste, marinate the chicken for several hours or overnight. Serve with roasted vegetables or a light salad.
