A delightful salad featuring marinated chicken, creamy mozzarella, and fresh veggies, balanced with a zesty balsamic vinaigrette.

Ingredients

  • 2 Chicken breasts
  • 1 cup Mozzarella balls
  • 1 Avocado, sliced
  • 1 cup Cherry tomatoes, halved
  • 4 cups Baby spinach
  • 2 tbsp Olive oil
  • 2 tbsp Balsamic vinegar
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Marinate the chicken breast in olive oil, balsamic vinegar, minced garlic, salt, and pepper for at least 30 minutes.
  2. Bake the chicken for 20-25 minutes or until fully cooked.
  3. Allow the chicken to rest, then slice it.
  4. Combine baby spinach, cherry tomatoes, avocado, and mozzarella balls in a large salad bowl.
  5. Top the salad with sliced chicken.
  6. Drizzle with homemade balsamic vinaigrette made from olive oil and balsamic vinegar.
  7. Serve immediately.
