  • 4 pieces skin-on chicken drumsticks
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack on it.
  2. In a large mixing bowl, combine the paprika, garlic powder, cayenne, salt, and black pepper. Whisk thoroughly to ensure the spices blend evenly.
  3. Add the olive oil to the spice mix and stir until you create a paste-like coating.
  4. Pat the chicken drumsticks dry with paper towels. Use your hands or a spoon to rub the spice mixture over each drumstick, ensuring an even coating.
  5. Arrange the coated drumsticks on the prepared baking sheet or wire rack, leaving space in between for air circulation.
  6. Place the chicken in the oven and bake for about 40 minutes, flipping halfway through, until the skin turns deeply golden and reaches an internal temperature of 165°F (74°C).
  7. Let rest for a few minutes before serving.

Notes

For added crunch, consider broiling the chicken for the last few minutes of cooking. Pair with your favorite dipping sauces and side dishes.
