- Unsalted butter, 2 tablespoons (30 ml) (28 grams)
- Olive oil, 1 tablespoon (15 ml) (15 milliliters)
- Onion, finely chopped, 1 medium
- Garlic, minced, 2 cloves
- Thyme leaves, fresh, 1 teaspoon (5 ml) (1 gram)
- Salt, to taste
- Black pepper, freshly ground, to taste
- Nutmeg, ground, 1/4 teaspoon (1 ml) (1 gram)
- Water, as needed

- Preheat your sous vide water bath to 185°F (85°C).
- In a skillet over medium heat, add olive oil.
- Sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and thyme leaves; cook for 1 minute.
- Stir in Arborio rice, coating it well with the oil and aromatics.
- Add the pumpkin puree and mix thoroughly with the rice.
- Pour in 2 cups of chicken or vegetable broth, stirring to combine.
- Season with salt, black pepper, and nutmeg to taste.
- Transfer the rice mixture to a sous vide bag or vacuum-sealable bag.
- Remove as much air as possible and seal the bag.
- Submerge the bag in the preheated water bath.
- Cook for 1 hour, ensuring the bag remains fully submerged.
- After cooking, remove the bag from the water bath.
- Pour the contents into a large saucepan over medium heat.
- Gradually add remaining broth, stirring continuously.
- Stir until the risotto reaches a creamy consistency.
- Mix in the grated Parmesan cheese and unsalted butter.
- Adjust seasoning with more salt and pepper if needed.
- If too thick, add water to reach desired consistency.
- Serve hot, garnished with chopped parsley.
