Ingredients

  • Arborio rice, 1 cup (240 ml) (200 grams)
  • Pumpkin puree, 1 cup (240 ml) (240 milliliters)
  • Beef or vegetable broth, 4 cups (960 ml) (960 milliliters)
  • Parmesan cheese, grated, 1/2 cup (120 ml) (50 grams)
  • Unsalted butter, 2 tablespoons (30 ml) (28 grams)
  • Olive oil, 1 tablespoon (15 ml) (15 milliliters)
  • Onion, finely chopped, 1 medium
  • Garlic, minced, 2 cloves
  • Thyme leaves, fresh, 1 teaspoon (5 ml) (1 gram)
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • Nutmeg, ground, 1/4 teaspoon (1 ml) (1 gram)
  • Water, as needed
  • Parsley, chopped, for garnish

Instructions

  1. Preheat your sous vide water bath to 185°F (85°C).
  2. In a skillet over medium heat, add olive oil.
  3. Sauté the chopped onion until translucent, about 5 minutes.
  4. Add minced garlic and thyme leaves; cook for 1 minute.
  5. Stir in Arborio rice, coating it well with the oil and aromatics.
  6. Add the pumpkin puree and mix thoroughly with the rice.
  7. Pour in 2 cups of chicken or vegetable broth, stirring to combine.
  8. Season with salt, black pepper, and nutmeg to taste.
  9. Transfer the rice mixture to a sous vide bag or vacuum-sealable bag.
  10. Remove as much air as possible and seal the bag.
  11. Submerge the bag in the preheated water bath.
  12. Cook for 1 hour, ensuring the bag remains fully submerged.
  13. After cooking, remove the bag from the water bath.
  14. Pour the contents into a large saucepan over medium heat.
  15. Gradually add remaining broth, stirring continuously.
  16. Stir until the risotto reaches a creamy consistency.
  17. Mix in the grated Parmesan cheese and unsalted butter.
  18. Adjust seasoning with more salt and pepper if needed.
  19. If too thick, add water to reach desired consistency.
  20. Serve hot, garnished with chopped parsley.
