A rich and flavorful Jamaican curry chicken dish, featuring tender chicken marinated with aromatic spices and cooked in creamy coconut milk.

  • 2 pounds bone-in chicken pieces (thighs and drumsticks)
  • 3 tablespoons Jamaican curry powder
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, sliced
  • 2 scallions, chopped
  • 1 large tomato, diced
  • 1 can (13 ounces) coconut milk
  • 1 Scotch bonnet pepper (optional)

Instructions

  1. Marinate the chicken with salt and Jamaican curry powder for at least 30 minutes.
  2. In a large pot, heat some oil and sauté the diced onions until translucent.
  3. Add the minced garlic and grated ginger, sautéing until fragrant.
  4. Brown the marinated chicken pieces in the pot for approximately 7 minutes, until golden.
  5. Stir in the coconut milk and allow the mixture to simmer for 25 to 30 minutes until the chicken is tender and the sauce thickens.
  6. Taste and adjust seasoning before serving, removing the Scotch bonnet if used.

Notes

For more infused flavor, consider marinating the chicken overnight. Adjust the quantity of curry powder to your heat preference.
