  • 2 lbs chicken (cut into pieces)
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice (pimento)
  • 1 medium onion (sliced)
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 2 medium potatoes (cubed)
  • 2 medium carrots (sliced)
  • 1 bell pepper (sliced)
  • 23 spring onions (chopped)
  • 23 cups chicken broth or water
  • 12 scotch bonnet peppers (whole or diced)
  • 3 tablespoons vegetable oil
  • Salt to taste
  • Black pepper to taste
  • Fresh thyme (optional for garnish)

Instructions

  1. In a bowl, combine chicken pieces with Jamaican curry powder, allspice, garlic, ginger, salt, and black pepper. Let it marinate for at least 1 hour or overnight.
  2. In a large pot, heat vegetable oil over medium heat.
  3. Add the sliced onions and sauté until translucent, about 5 minutes.
  4. Introduce the marinated chicken and brown it on all sides.
  5. Add cubed potatoes, sliced carrots, and bell pepper; stir well.
  6. Pour in chicken broth until just covered and add the scotch bonnet pepper.
  7. Bring to a gentle boil, reduce to low, cover and let simmer for 30-40 minutes.
  8. Taste and adjust salt and pepper. If too thick, add more broth.
  9. Stir in spring onions and thyme before serving.

Notes

For milder heat, keep the scotch bonnet whole; slice for more heat. Fresh ingredients elevate the dish’s taste.
