Ingredients

46 pound rib roast bone in

1 tablespoon salt

½ teaspoon black pepper

10 cloves roasted garlic

3 sprigs fresh thyme

2 tablespoons salted butter room temperature

Au Jus:

Prime rib cooking liquid from bag

1 cup beef broth

¼ teaspoon black pepper

Instructions

1. Season the rib roast with salt and pepper. Place uncovered on a rack in the fridge overnight.

2. Heat sous vide bath to 131°F.

3. Place the roast, garlic, and thyme in vacuum seal bag and seal.

4. Sous vide for 8–12 hours.

5. Remove and chill in an ice bath for 5–10 minutes.

6. Preheat oven to 500°F.

7. Remove roast from bag, reserve liquid, rub with butter, and roast 15–20 mins.

8. For au jus, simmer bag liquid with broth and pepper for 5–10 mins.

9. Slice and serve with au jus and optional horseradish.

Notes

Overcooking past 12 hours can affect texture.

Adjust final sear time depending on roast size.
